My son was bragging about his dinner to his girlfriend over Skype the other night, making her (what he said) jealous. Not so sure my food would make anyone jealous but hey I will take it! (Poor thing has to deal with a boy who eats and eats and eats…oh having boys who can’t stop thinking about food, that is a whole story for another day!)
Anyhoo I started thinking that this recipe is way too easy NOT to share!!
It is one of my boys’ favorite “Chinese” meals that is SUPER easy to make!! I know there are plenty of versions of this around the web, but here is mine:
1 large can of pineapple chunks
1 cup brown sugar
2/3 cup soy sauce ( I usually add more just for kicks)
4 pounds of chicken ( I think thighs bring the best flavor)
1 jalapeño cut into large chunks
1 onion cut into large chunks
*Mix the brown sugar and soy sauce
*Place the chicken in the bottom of your Crockpot
*Cover with onion and jalapeño
*Pour the sauce on top
*Cook on high for 4-6 hours
*At the very end add the drained pineapple just to heat through.
*Serve with rice (We love sushi rice with this. Even better is putting 2 tablespoons of coconut oil in the rice before cooking!)
